since technically I started being healthy a few days ago I am going to post dinner recipes from the last two dinners..why? So if anyone decides to actually read this blog they may find a tasty recipe and so I can make these dishes again.
Yesterday's Dinner
Spicy Pumpkin Soup
1 Can of purred pumpkin
4 cups of chicken or veggie broth
one can of Corn
1 cup of Salsa
A Can of rinsed black beans
and seasonings...I used red peppers, mrs. dash, and garlic salt.
Cook on stove or in crockpot :)
Approx 175 Calories for a cup :)

Ramen Noodle Stir Fry
Boil one package of chicken flavored Ramen noodles for about 2 minutes (until they are mostly done)
Drain water and add 1/2 package of seasoning
Cook 2 oz Chicken breast on stove in just a little bit of pam cooking spray
Add veggies, green beans, green peppers, carrots & mushrooms (LOTS!)
Fry again until veggies are cooked
Add Ramen noodles and let cook in the pan for a few more minutes until the noodles get a little crunchy.
Add Mrs. Dash or other seasonings if desired
Approx. 520 Calories for the whole thing.. (me and my hubby shared it :} )
*Beware this dish is higher in sodium..drink a lot of water!
